Riced Cauliflower Loaded “Potato” Salad

Ingredients:

  • 3 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1 (12 oz.) package Green Giant® Riced Veggies Cauliflower, cooked, drained and cooled
  • 4 slices bacon, cooked and crumbled
  • ½ cup shredded cheddar cheese
  • 3 green onions, chopped

Directions:

  1. Combine mayonnaise, olive oil and vinegar in large bowl. 
  2. Stir in Green Giant® Riced Veggies Cauliflower, bacon, cheese and green onion until evenly coated.
  3. Season to taste with salt and pepper.  Garnish with additional bacon, cheese and green onion, if desired.

Sugar and Spice Riced Cauliflower & Sweet Potato

Ingredients:

  • 1 (10 oz.) package Green Giant® Riced Veggies Cauliflower & Sweet Potato
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • pinch cinnamon
  • pinch salt

Directions:

  1. Cook Green Giant® Riced Veggies Cauliflower & Sweet Potato according to package directions.
  2. Stir in remaining ingredients.
